Introducing
Olive Varietals
Mission olives are slightly sweet and very buttery. They have more flesh than Frantoio,
Leccino and Coratina. This varietal can be pressed into oil or be enjoyed as a table olive.
Frantoio is a purple-black fruit, but at harvesting the olive is green and purple. It’s rich in
oil, is very fruity, aromatic, of high quality and has a stronger taste than Leccino.
Leccino olives are purple–black although it is advised that it is harvested when purple–
green. Their oil volume is lower than other varietals and delicate in flavour. The oil is
mildly fruity and frequently blended with other varietals’ oil.mildly fruity and frequently blended with other varietals’ oil.
Coratina olives are a small fruit, with a very small pip. The olives have a suprising
amount of flesh, yielding high in oil at the press. The Coratina olive oil tastes bitter and
unbalanced, with a slightly sharp taste.
Kalamata olives are almond-shaped. Kalamata olives are used primarily for curing and
brined in white wine vinegar. Kalamata olives contain a moderate amount of oil, and are
produced primarily as table olives. Brown and purple olives are brined in red wine
vinegar.
